Atlantic Halibut | Topped with Lemon & Rosemary

Healthy and flavorful are the two words that come to mind with this dish. Halibut is a treasure of the ocean with its full-bodied and flaky consistency while being packed with protein and minerals. This dish is the perfect farewell to Summer during these warm fall days.

This recipe is quick and straightforward taking less than 30 minutes to put together making it a superb option during the week. We top the halibut with salt, pepper, paprika, and lemon slices and then place it into a 450 degree oven. While roasting, we work on our side dish which may include anything from a mushroom risotto, cauliflower rice, or a vegetable medley.

Ingredients

Atlantic Halibut

  • 1 lb Atlantic Halibut
  • 1 Teaspoon Paprika
  • ½ Teaspoon Salt
  • ½ Teaspoon Pepper
  • 1 Lemon - Sliced
  • 2 Sprigs Rosemary
  • 1 Tablespoon Olive Oil

Instructions

Atlantic Halibut

  1. Heat oven to 450 degrees Fahrenheit
  2. Place Atlantic Halibut filet into a baking dish. Coat with olive oil and then season with paprika, salt, and pepper. Once coated, place the rosemary sprigs and lemon slices on top of the filet. Place into the oven and bake for 10-12 minutes depending on thickness of the filet.
  3. Once the Atlantic Halibut filet becomes opaque, broil it for 1-2 minutes to finish the layer with a nice crisp.
